Curious.  Couple suggestions:

- have you drilled a small hole in the thermostat plate?  Helps immensely 
with getting the air pockets out. Install with hole at the top of the 
housing. The hole trick makes bleeding simple and fool proof.   It's a bit 
of a trick to get the air out of these systems I've found.

- do you know if your fan clutch is really working?  When it is, as the car 
heats up (extended stoplight on a 75+ degree day), you should hear a 
distinct roaring sound under the hood as you pull away from the light.  Sort 
of like a schoolbus.  If you're not hearing that, then I'm not sure the fan 
clutch is really working.

- if you can rev the engine to help cool, I'm not sure how you could have a 
slipping impeller.

- you're bleeding the engine with the heater valve open, right?

- is the water pump / fan belt tight?

- are all the clamps tights?  I've seen systems suck in air as they cool 
(but not leak when hot) with loose clamps.

Maybe one of these idea's might help..  Good luck...let us know what it 
turns out to be.

Not to be sassy, but since my t-stat's get OE equipment replaced with my
water pumps, or rad's or hoses, or just about any cooling system event, I
haven't had a "sticky" t-stat since my e12 530i when I was 16.

That is classic cooling fan trouble.  I can't explain why considering you've 
replaced ecverything.  Since the heater works, the water pump is pumping.

When the evidence conflicts with your theory, get a new theory.
