I was using a ThermoWorks Thermapen, which is quite accurate.   You
guys are right about the falling thru air cooling; this morning I took
the group and dropped one side while running the pump, and the water
temp went from 201 to 204 as it was running for about 10 seconds.
Temp control/display is set at 94, so I am apparently running a bit
hotter than set for.  I will dial down the temp to 93 and see if my
flavor improves....

I also do not make it a habit of running any water through the head
before brewing, are you guys doing this routinely, or recommend a bit
of a flush first?

Ben, what were your observations of display/thermometer differential
using the infrared thermometer?

hello, it's a good idea to run about two ozs water thru the brew head to heat it to the set temp. that is after the machine has been sitting idle. -Dennis
