I think you're out of luck. You need a three-wire p-stat. The NO feeds
power to the PID for the brew boiler. You can't just wire it direct to
110V or it will pop the breaker the first time both boilers call for
heat at the same time.
If you've already bought the part and can't return it, I guess you could
install a relay with the control input hooked up to the p-stat NC and
then hook the NO wire to the relay's NO. Kind of a 110V not-gate.

do with the Normally Open wire?
