Hey Benjamin, I missed the followups on this. Yes, lack of water flow would of course affect pressure, but I don’t think it would cause the pump not to engage. The only protection I know of for the pump is when the tank is nearly dry, and possibly when the overheat sensors trip on the boilers.
There are a couple of ways low flow can happen. If you’re using a pourover machine, the pump could be losing prime; look for any leaks that might let air in. Most commonly, the pickup line in the water tank may be floating and giving intermittent flow because it’s sucking air in addition to water. Attach a little food grade weight to it, and also cut it at a 45 degree angle so it can’t suck flat to the bottom of the tank. Also, if you’re using the water softener on the pickup line, it could be clogged and might mimic your symptoms—i.e. letting enough water soak through while between shots, then choking again at higher demand. I’d remove it and see what happens when you pull a shot as a starting point. Otherwise, the pump may be near its end—do you know how old it is? I’ve had vibe pumps that were failing that gave totally random pressures, so definitely a possibility and an easy fix. OK, let us know what happens and good luck.
