I did a quick search around... any manually resettable thermostats; apart
from the ones on Amazon. I'm not sure if I'd trust them as they don't come
from a reputable manufacturer (and they are a safety device afterall). The
closest match I could find would be either Digikey 480-6152-ND or
Mouser 682-1NT01L-7949 (Note the Mouser part is only rated at 140C, but
should be fine for the brew boiler at least; maybe not the steam boiler).
Both have a rating that exceeds 10A, so should be good for 1200W elements
and both have a working temp well above 150C. Only issue is they both
automatically reset, so if you are having an issue they will cut in and out
instead of click out (and then you have more of a permanent;
albeit resettable; record of what happened).

If the terminal was loose, there would have been a higher resistance which
could have caused localised heating: which in turn leads to the device
tripping. Kind of like a redundant self protection of that part. So loose
terminal might explain why it tripped out initially (which is much better
than the boiler actually heating up that hot; which could cause heating
element damage).
