I think we’d have to be talking light to medium air to hand trim a headsail.
I single hand while flying a chute without winches for the sheets so
certainly it would work off the wind.

I once single-handed a tack on a C50 in the BVI without using a winch handle
just to make a point about how little effort it takes to tack if you timing
is right. The Catalina Dealer on the boat said it couldn’t be done. It
worked just fine going to weather with enough wind and waves to get weather
deck wet.

I turn the spinnaker sheets on a ratchet block to pick up a 180° warp and
send it forward to the wheel turning it again in a 3” BB Garhauer check
block and cleat to a Harken 150. Again Light to medium air but a similar
turn on a ratchet block may do it.

Yes, I was thinking about doing something like that. I may consider
replacing the single block on the jib track with a double block and run back
to a single block somewhere on top of the gunwale behind the wheel. There is
a cleat already there

you could just put a pully and cleat back there then after a tack lock the
wheel and then finish setting the jib I have seen this on other boats but
never tried it myself.

I am looking for an easy solution to single hand my 27. I am outfitted with
a wheel which I love but it creates a problem in getting to the jib winches
that are forward of the wheel. Every time I tack, I have to fight to get
past the wheel to winch in the jib. I was thinking about moving the winches
back so that I can get to them easily but I does not look like there is
enough surface to mount them with out making some sort of bracket. Has
anyone ever done this or created any kind of alternative system to haul in
the Jib from the back of the cockpit
