Looking at the posted recipe, I can say I haven't seen or heard of it in
Cajun country.  We have other uses for organ meats like dirty rice or boudin
sausage.

But it sounds intriguing.  I might give it a try next time I go to a la
bucherie and can get some fresh livers.
