For you US folks (yes, I know I use the term improperly but that's how all
non-*yanks* call yez!), black pudding is made up of
1 lb Pig's liver
1 1/2 lb Unrendered lard, chopped
120 fl Pig's blood
2 lb Breadcrumbs
4 oz Oatmeal
1 Medium onion, chopped
1 ts Salt
1/2 ts Allspice
1 Beef casings .
Tastes pretty good too. Well, until you know what's in it.
I'd a cousin from a real rural part of Ireland who used to eat the stuff
raw.
We called him the King of Ming Mountain.
(ming: colloquialism for gross, disgusting)
