Brine the 12-14lb turkey for about 24 hours in 2 gallons water and
kosher salt, butterfly it (an exercise in true kitchen moxy!) lay on
some melted butter and bake at 450 for two hours!

crispy browned skin juicy meat! super good!

tried and true, my favorite way to cook a bird!
