My system: A) You start w/ 20% B) The first mistake you make drops you down to 15% C) Good or bad things along the way can bump you up or down a point. I have had people who never made mistakes. I used to have a roommate who could easily pull in $400-$500 a night in tips (on the weekend). While I wouldn't consider that living it up, it tops minimum wage. He worked for a TGI Fridays, so it's not like he was at a fancy place where the average plate was $100+. On a completely separate note, that same TGI Fridays (where my old roommate worked) is being sued by an ex-worker there, who complained that time spent doing "extra duties' such as filling ketchup bottles and salt / pepper shakers prevented her from properly servicing her tables, thus resulting in lower tips.
