Back in my Waiter days, when I did these duties, I had to clock in under a different code and be paid more per hour while I was doing it. I was under the impression at the time that this was an IRS rule. Now, one probable still did not make what one could make in tips per hour, but we also did this at the end or beginning of shifts where the customer load was low or gone after the restaurant was closed.
