Hello, I may be able to help with the issues you are having. You may find this
paper helpful, describing issues that we faced in putting EASE-Grid 2.0 data
into netCDF-CF compliant files:

Brodzik, M. J., D. G. Long and M. A. Hardman. 2018. Best Practices in Crafting
the Calibrated, Enhanced-Resolution Passive-Microwave EASE-Grid 2.0 Brightness
Temperature Earth System Data Record. Remote Sensing, 10(11),

Some of the things we did will definitely apply to your data as well.

That said, it appears from your initial post that your data are actually in the
original EASE-Grid (using the authalic sphere as projection ellipsoid). Note
that EPSG:6931 is for EASE-Grid 2.0. There were several early attempts to
define EPSG codes for the original EASE-Grids. We would need to figure out
which is the correct one for the data you have. There are plenty of data sets
still in the original projections, so if there's a problem with the EPSG wkt,
we should definitely figure that out. I am glad to help if you have more
questions.
