I have severity set to "debug" (I was getting desperate!) but I'm
getting nothing.
I don't know if it is possible possibly to redirect the logs to a
different file?

I have checked the format of the undeliverables, and some of them had
strange strings in the 'from' field (should this make a difference,
though) - so I have fixed and re-spooled those, but most look fine to my
eyes...

Now thats pretty strange.

If, on the Mail page in CF admin, you have the error log severity set to
"Warning" I would have expected something like this :

Invalid Addresses; nested exception is: javax.mail.SendFailedException:
550
5.7.1 Unable to relay for [EMAIL PROTECTED]

or "invalid email address in the TO field" appearing in your mail log.

But as John says, you need to check the content and format of the
undelivered emails.

Sorry this isn't much help

Stephen
