I was at a CFUnited a couple years ago and Adobe was talking about a new plan they had started that offered Adobe products for free to educational institutions. I haven't heard much beyond that but I doubt it would take too much more then a phone call to them if an Educational Institution would be interested in teaching about Adobe products.
I've been teaching a class in CFML at my local CC for many years (5?) now. I've been meaning to post the curriculum online for quite some time, but haven't done it yet. I start teaching again in just over a week.
