Myra, albinism is not the only simple recessive trait. There are many simple
recessive traits which are affected by other genes which the animal carries.
This is called epistasis. One of such simple recessive trait is the
chocolate color in Cavaliers. The dog can have two genes for chocolate and
still not be a visual chocolate color. This happens when the dog also
carries two genes for red. In that case, the dog is a Blenheim or Ruby even
though it has both genes for chocolate. Not all simple recessives are as
powerful as albinism or red when carried as a pair.

BTW there is an albino that has brown or hazel eyes and red or blond hair in
humans. There is also an albino in horses that is brown eyed. Just because
the organism has two albino genes doesn't mean that it will always be a
ruby-eyed white. It depends on what kind of albino gene it carries and, in
some cases, what other genes it carries.

Genetics is a vast subject and much more involved than a study of Mendelian
principles would lead us to believe. It is like comparing the alphabet to
world literature. Mendelian principles are just a starting point.
