Hi Jesse
I looked at the log snippetts, I dont think there are any infos about the 
gforce drivers doing something wrong. I would suggest booting without X 
(runlevel 3 most likely) and doing something heave on the box, i would 
suggest running updatedb several times over and maybe apachebencs ab with 
horifying parameters, but no X. And see if it locks up or not. If is does, 
the problem could be somewhere else, most propabbly hardware oriented.
1hint: cpu overheat ??
2hint: irq conflict
3hint: ram error
