Welcome to Matterhorn!
In fact, UC Berkeley currently (using Podcast Producer) is distributing
to iTunes and YouTube. We are the ones that put in the additional
feature in Matterhorn (via a contract with Entwine) to include iTunes
and YT distribution in MH.
So we are kind of in the same boot!
We are also finally starting to really test iTunes and YouTube
distribution, so I am afraid I do not have the answer for you. We are
aware of the issues involving how to distribute recordings with 2 video
streams to iTunes and YouTube, which are single video source
distribution channels. I am pretty sure that it is possible, but I do
not think anyone has actually tackled this issue yet. It looks like you
may have had some success in stitching together the video and screen
capture, but ran into some issue. Hopefully, a developer will be able to
help you out in this work.
