I use an external SCSI hard drive, external CD-ROM drive, localtalk
networking, ethernet networking, and even the floppy drive when
appropriate. These are plenty convenient for me; I have several SCSI zip
drives but rarely bother with them. I see little value in trying to hack
up a compact flash interface.

The upgraded version of your Centris, the Quadra 650, is one of my
favorite Mac models. I think System 7 on a fast quadra with a quality
Apple color monitor is a very attractive vintage Mac.

While I appreciate the quiet operation of the Plus and below, the SE and
Classic are the minimum models for me to use. I like the oval mice and
small keyboards; the "aircraft carrier" keyboards are just out-of-place
on a compact. And I prefer the convenience of System 7 over the speed of
System 6 (I am a patient person!).
