One of the chips mentions GPIB I think, I wonder what was connected to it ?

GPIB, for General Purpose Interface Bus. The standard's number is IEEE488.1 .
I have never heard of that kind of connector before, pity the hard drive in this SE appears to be dead, that may have given some clues as to it's original use.
You might check at National Instruments web site to see if they have any documents for legacy devices. National Instruments is one of the biggest makers of instrument interfaces to PCs and they were (are?) heavily into Mac support at one time. They might have made a card for the SE.
