I know it's for the PC, but there's a program called FastTracker 2 (http://www.gwinternet.com/music/ft2/) which can be used to compose MODs (and other formats like s3m) and was, for a long time, the staple of the Demo Scene*. You just need a bunch of WAV files to start creating music, but if you've got a MIDI keyboard you can add notes using that, too.

* For those who don't know, Demos are just fancy pieces of code to show off what a computer is capable of creating 'on the fly' - usually a load of music and animations. Not sure how big the Mac demo scene ever has been though... anyone got any Mac demos they'd care to share?
