Well, I received the card yesterday, but haven't gotten around to
installing it yet. But I came up with a new question about the drives.
Can I only hook up one drive to the card, or can I daisy chain them, the
way I seem to remember them on the Apple IIe's that were in my school?

I have never tried testing how many drives can be daisy chained but I expect the answer is two (maximum for the standard Apple II smartport). If you can get UniDisk 3.5" drive (now getting expensive), it should be the first on the chain.
