The problem is that there are some operations that the operating system just won't perform and doesn't have sufficient hooks in the API for programmers to add them. These three processes are necessary to detect certain conditions and relay the events to iTunes. If you turn them off iTunes will still run, but some functions will no longer work. To illustrate with a similar issue, this is a big problem for publishers trying to manage fonts on a Windows computer. Someone who is used to the smooth operation of fonts on Macs is shocked when they buy the same software title for Windows and discover that many important functions are missing. Then they look at Windows-only font managers and discover that these programs are equally deficient. Windows just does not provide access to some critical font-related functions. Same goes for some functions iTunes provides.
