Netatalk provides the reverse of the type of functionality you're looking
for, allowing a lpr printer to appear as an appletalk one to Mac clients.
If the printer can act as an lpr server, you should be able to use it from
Linux, but I don't know of any method to speak directly to an Appletalk
printer.  I have mine hanging off a print server, connected to ethernet.
