About 5 medium potatoes, scrubbed, cut into chunks, do not peel.
1 large onion cut into chunks
3 or 4 celery stalks, with leaves, string removed, cut into chunks
1 bay leaf
1/4 tsp. dill weed
enough water to cover everything in a pot.
Put everything in a pot and cook with cover slightly off-center until
potatoes and celery are tender.
Allow to cool until you can touch the sides of the pot and hold your hands
there for a few moments without being burned.
put some of the cooked potato mixture into a blender and puree until creamy
smooth, do not over- puree.
pour contents of blender into bowl.
Continue this until all potato mixture is pureed.
put soup back in pot and season with salt and freshly ground pepper.
You can add a little dried thyme to this if you like that flavor.
you can add more dill if you like that flavor.
