MY EASY POTATO SOUP

     Potatoes
     Onion
     Salt
     Pepper
     Milk
     Butter
     Crackers

Peel and dice potatoes, dice onion then boil potatoes and onion until potatoes are fork tender. Drain half of water and replace with milk. Add some butter, salt and pepper to taste. Cook until hot then its done. Top with crackers.

POTATO SOUP



2 cups water

4 potatoes, diced

2 onions, diced

2 stalks celery, diced

4 strips bacon, diced

2 cups milk, scalded

2 Tbsps. butter

1 Tbsp. flour

salt and pepper



Method



1. Cook potatoes; brown onion, celery and diced bacon for 10 minutes.

2. Add to potatoes.

3. Cook 30 minutes.

4. Combine milk and flour, stirring constantly.

5. Add very slowly to potato mixture.

6. Add salt, pepper and butter.

7. Cook for 5 minutes more.
