Here is another recipe, Leigh. It's my favorite:
Shortbread Cookies with Frosting
1 cup butter or margarine, melted
½ cup packed light brown sugar
2 cups flour
¼ teaspoon salt
¼ teaspoon baking powder
Frosting:
1/2 cup butter, softened or melted
2 cups powdered sugar, (approximately)
1 to 2 tablespoons milk
½ teaspoon vanilla
½ teaspoon almond extract
Cookies: Preheat oven to 350 degrees. Cream butter and brown
sugar. Stir in flour, salt and baking powder. Pinch off pieces of
dough, about 2 inches in diameter, and pat into desired shapes. Bake
for 15 minutes. The cookies will feel firm.
Frosting: Cream butter and powdered sugar. Add enough milk to make
spreading consistency. Add flavorings. Frost cookies and let stand
until set.
Note: You can make the topping thin, if you prefer icing;
however, the thicker frosting gives this cookie a nice texture. The
combination of vanilla and almond extracts give the cookie its unique
flavor. Goes well with tea or coffee.
