Hi Nicole,
Welcome to the list! You will find lots of good cooks with lots of really good recipes on this list of nice people. Hope you enjoy it. I am Katie from Oklahoma. We also have a quesadilla maker. Ours is similar to what you described but it is round and fits the tortilla really good being round like that. You described well how I put them together when making them, using different ingredients some times. I however go ahead and plug mine up and pre heat it first. I sometimes use buttered flavored cooking spray to spray on the bottom and top of the grates before laying the tortilla on the bottom one, but both top and bottom of the grates are sprayed. We don't use ours very often, but, it is nice to have if we get the urge! smile.
Happy cooking! Katie

It's like a large George Foreman grill, but with a pattern on the surfaces
that aids in cutting the quesadilla into triangles. (For those unfamiliar
with a George Foreman grill, it's two heated nonstick surfaces that close on
top of each other to heat things, so that food is heated on both sides)
I take two of the burrito sized flour tortillas and butter them. Then I
place one butter side down on the cooker, and then put on a thin layer of
cheddar, Monterrey Jack, or a blend of the two. Then I put on a mixture of
canned shredded chicken, salsa, mushrooms, and mixed vegetables. Next comes
another layer of cheese, and the other tortilla, butter side up. Then I
close the cooker and plug it in, setting the timer for five minutes. (The
manual calls for three minutes heated, and I find that it takes two minutes to get to temperature) When the timer goes off I unplug the cooker, open it,
and use a big spatula to move it to a plate.

I suspect it also does a great job on grilled cheese sandwiches, as I used
to cook them on my George Foreman.

Hi Nicole,
Could you describe your quesadilla cooker? I really didn't know there was
one, just figured you would put them on a cookie sheet and bake them. I
have never really made them but my daughter does. I mostly enjoy eating
them so I am very interested in what that is.

Hi, Nicole. Nicole is actually my middle name, and we spell it the same
way. I'm totally blind, as well. As for a pasta pot, well, we had one,
once, but a handle broke off while my hubby was draining spaghetti. So,
now we use it for the sterilizing pot. lol I bleached my little girls
sippie cups in it, once, and it's never been the same. lol

Since I'm new, I thought I'd introduce myself too.

I'm Nicole Massey, most people call me Nyyki. I like to cook, and use
things
like my crock pot, quesadilla cooker, pasta pots, and just about any
other
tool that I need to cook. I work from both recipes and through
improvisation, though I tend not to follow recipes exactly because I like

to
experiment. I tend to document my experiments, though, because that way I
know what worked and what didn't.
I'm completely blind and living alone, so I tend to make things that
reheat
well and don't require sighted help. (Unfortunately my guide dog doesn't
like to read labels and such, so he's not much help in the kitchen unless

I
drop something edible, which gets a frown from me)
