Katie,
I agree.  Of course, some things are better unprocessed.  There's nothing like 
cottage cheese and a sweet fruit on a hot day for a light meal, or cold chicken 
with some greens, tomato, etc., and whole grain bread dipped in olive oil and a 
touch of herbs., either.  Easy doesn't have to be unhealthy.
