Hi Lisa, I am in the same state as you except I do have a deep freeze. There is 
a site on the about.com site that produces weekly news letters for cooking for 
two. I haven't subscribed to this list but I have found the news letters from 
this site to be quite informative. Below is the URL for the home page for this 
cuisine. And, there's no charge; there are advertising on the pages but you 
don't get any spam from them.

Yes, exactly.  it's really hard to cook for one person affordably and healthy.  
I suppose if I had a freezer I could buy the healthy ingredients and make 
everything from scratch and then freeze it, but I don't have a freezer other 
than the small one above my refrigerator.
