I didn't know there was such a thing as a countertop steamer. That's pretty cool and I might have to look into one. I like steamed broccoli and green beans, so it would be a worthwhile investment. Thanks for the idea, Nicole. OH and you're welcom, Mary, for the recipe. I'm glad you like it. I also put ranch in my mashed potatoes sometimes. One of my friends did that when she made mashed potatoes for me a while back and I love it. Then again, I love ranch and some people don't.

I like potatoes for mashing steamed instead of boiled -- they keep more of
their nutrients that way and still come out just as soft. I put them in a
steamer on the stove or a countertop steamer for about 25 minutes. If I use
a countertop steamer then the water in the catch tray goes back into the
potatoes to keep all the nutrition in the recipe.

I generally boil the potatos if whole about 35 to 40 minutes and when
they start to fall apart then they are ready for mashing.  If you cut
up the potatos they cook much faster.
