If I am only cooking for myself, I touch the top of what I'm going to flip 
while I flip it. Unless the pan has been closed for topside is generally not 
very warm. Once something has been flipped the hope you cannot touch the side 
that just came up off of the bottom of the pan! If I am cooking in my 
restaurant I wear food gloves which will enable me to use the tip of the glove 
to find the food if I am not aware of where it is on the grill
