Trin I find it easy for me to do the following I usually get a frozen one so about a day before depend on the size of it, I allow it to sit in my bath or sink filled of water to defrost
Once defrosted I remove the inside and toss them out! Yukky don't llike the insides! I wash the turkey and neck and then rub both down in a lot of lemon inside and out. Once it has been rubbed in a lot of lemon I butter it all up with about a pound of butter, Yes I know but man,so good... Once buttered inside and out I wrap the neck in foil and set aside(I will cook it aside of the turkey as I will use the neck meat for my gravey. I will prepare my stuffing that consist of ground beef(lean) green bell peppers, carrots and celery. I stuff the turkey all over, inside, under wings, in the skin everywhere I buttered and lemoned it. All the while I have the oven preheating at 425 Once rubbed and stuffed I wrap the bird in foil what I do is place foil on my pan long ways then short way and place the bird in side and warp it all up foldeing the foil at the top like I I am squeezing it leaving some space so the foil is not touching the turkey on the top I then wrap my neck and put it aside of the bird in the pan and pop it in the oven. After 2 hours I check it and lwer the heat some and so on I usually make a big turkey somewhere from 18lb and 24lb one year I made a 36 pounder, whoosh!
