One suggestion I've seen on the cooking network is to cook at 425 for
about 45 minutes then reduce to 350. Cook to 165 uncovered. Remove
from oven, cover with aluminum foil. It will finish cooking by itself.
180f will overcook and dry out your turkey.
My favorite way though is to brine  the turkey for 24 hours. Then cook
it at 500  for half an hour and turn the oven down to 350. Doing this
brings the cooking time down to about 2.5 hours. If anyone wants more
specifics let me know but you will need to start the process today..
