Actually that's why the recommendation is 180, not 212. A roughly 30 degree difference is factored into the recommendation. Also, note that this puts your peak temperature closer to 240. Leaky baffles is the most common cause. Often it's not obvious. You want to ensure that no air makes it from the top to the bottom without going through the fins on the cylinders or heads.
