Steve, I don't think that you should worry about it.  This spring when I
picked up N94715, the temps were around 180 degrees on 70 degree days. 
When the outside temps started averageing around 85 degrees, I noticed
that the oil temp was averaging between 200 and 210 degrees.  It scared
the poop out of me, and I asked my A&P if there was something wrong.  He
has over 40 years experience and used to work on Coupes a lot down in
Denver when he was much younger.  He told me that many years ago a line
A&P for a Ag spraying firm used to tell the pilots that came in to tell
him that the oil temp was runnig high that if it bothered them to cover
the guage.  There is a Service Bulletin from the old Ercoupe factory
telling why they quit putting oil coolers on the engines.  In the SB it
says not to worry about temps as long as they stabilize below red line. 
By the way, all my baffles are in place and in excellent condition.  My
oil temp stabilizes at 210 degrees on days when it is between 95 and 105
degrees out (I fly usually at 4000 msl with local terrain being around
2700 ft. msl) and between 180 and 210 on days when it is between 35
degrees to 90 degrees.  I haven't flown yet in colder weather.
