About 100 MPH :-)

Oh, I guess you could putt along at 85 or 90, but you're starting
to get out of the 'green' range on most Coupes at that point.

It's not particularly good for airplane engines to fly them around
at low power. You also get into the area where carb ice is more
likely without application of carb heat. Though I guess not
so much so in AZ.

Just fly it at cruise. That's what it's made to do.
