I think neither. Darktable has an internal database to store history
stacks and uses xmp files to back up these data. If images in a folder
have a database entry already and you re-import the folder, database
entries takes precedence over xmp files. Darktable does not see your
changes.

You could do the following. Prior to re-importing the folder you can
"remove" (not delete!) the affected images from lighttable mode. This
way you actually remove their database entries. Upon re-import entries
will be regenerated from your xmp files.
