One monkey's "reasonably approachable" is another monkey's "here there be dragons", of course, but... just studying the build script you're using, command by command, looking up whatever you need to in order to understand the effect of all of them with their options... that's always seemed like a good approach to me. For comparison purposes, you can find the more procedurally straightforward (if slightly obsolete) SlackBuild script for darktable here: https://slackbuilds.org/slackbuilds/14.2/graphics/darktable/darktable.SlackBuild Might help give some triangulation on the essential common elements between the two (it's for release versions, so lacks the git stuff, but the modified version I use for git builds is substantially the same). You'll note that SlackBuild scripts don't install directly to the system, but rather to a "package" directory, which is then converted to an actual package with the usual Slackware tools.
