It took me a while to realize, that what the camera is putting into jpg is not 
the "truth". I guess your camera has different "picture styles" like portrait 
or landscape. Every picture style manipulates your raw differently to arrive 
at the jpg. The jpg is done in a way (hopefully), to match the expectation of 
most users given the picture style. Therefore, setting the picture style is 
part of the creative process, but much more limited than what you could do 
developing a raw by yourself.

You are right, that it comes done to personal taste. You might want to get a 
pretty picture in a artistic sense, or you may want to picture think "as they 
are" trying to get everything as realistic as possible. For the second case, 
jpg might be close to want you want, especially if you choose a neutral 
picture style. But shooting jpgs is not a guarantee to catch the "world as it 
is".

Personally, I found the move to shooting raw only a good experience. It is 
more work in the post-processing, though.
