While all of this is true (colour is ultimately an artistic choice), it's also the case that there *is* a technically correct colour rendition for a RAW. This correct colour rendition can be mapped out by photographing colour calibration charts such as the various ColorChecker models. If darktable doesn't properly map the colours of a calibration chart for a particular camera[*], I would consider it a bug. Aritistic colour choices are easier to make when you have a good starting point. (Such correct colour may or may not match the in-camera JPEG rendition.
