There really is no OS preference for application background that I'm
aware of on unix/gtk+ - quite possibly I'm just missing it but ... ;-)

How to change it is a difficult thing to choose of course.

Nope - I mean allowing the existing gtk+ themes to specify what the
libreoffice app background color is, using a special tweak-able. We
could feasibly add a number of these and encourage theme authors &
distro creators to tweak them to something that suits their taste. That
of course involves some work - but its quite do-able work.
