I had exactly the same problem with mine when I first set it up, on a very similar system to you.
Install LAME encoder into the main slimserver directory, and then restart the slimserver service. Then launch slimserver, and go to Player Settings>Audio. Enable bandwidth limiting - mine's at 320 still, and the problem was resolved. (If I set it to "no limit" I get the same problem again). The setting already WAS on 320, but it seems that I needed LAME to be installed to do the on-the-fly MP3 encoding for me.
