Rating is a special plugin, isn't it? A long press on an item should be showing a menu where you can change ratings.
As to the volume I don't know what is happening there, but I'm also not using Logitechs App. I suggest trying the Apps Orange Squeeze or SqueezeCommander. There are much better than the Logitech offering. SqueezeCommander also does support Ratings directly on the NowPlaying screen.
