If you've got lots of disk space but not much excess CPU power, you can write a script that transcodes your FLAC collection to one or more additional formats on disk, in a parallel tree. You'd put that script in a cron job that runs over night to keep the secondary formats in sync as you rip new flacs. Point your slimserver at the FLACs, and point iTunes at the AACs.
