So, if an amplifier - in analog mode, or a simple analog-only amplifier
- is "just passing it through", how come the price you pay for the
amplifier varies so much?  Or do you think that all amplifiers sound
the same?

This is of course potentially controversial. There is a respectable
school of thought that says that any half-decent modern amplifier is
actually pretty good, and the differences are very small.  But the
extra money you can spend on a "good" amp can make a difference - the
only question is whether that difference is audible to you in your
setup. It may well not be.

Much more likely to limit your sound quality is your speakers, IMO.
