Hi Tim and Hank and anyone else interested. You can set the bit rate
in itunes. It The choices are only available once you select mp3. You
get a pop up with 128, 160, 192 etc. The only way to make any of the
selections stick is to click the mouse on them. I had to do a load of
juggling to get the preferences to hold by a combination of mouse
clicks and not just VO clicks. Also, to change tabs you have to use
the rather unwieldy keyboard combination of command-mouse click and
left or right brace (or something like that). you can find the exact
combination in the help files.Also, it doesn't tell you that you've
changed tab, but you know that you have because the options change
once you move into the tab. Hope this helps.

Yes you can tell it what format "AAC, mp3 or AIff" and doable by VO.
Not for bitrate though.  Most is explained on the iTunes of the
Wiki.  If you have any other questions, let me know.  Just for the
record, I feel that iTunes is great.  Could be more accessible but an
awesome application.
