I think I may have made some head way into finding lists. If you go to the project's page and then click mailing lists, you can subscribe. This is how I found the [EMAIL PROTECTED] list.

I think you have picked the only project or category that does not have a link to the mailing lists :) The Project Leads change their web site landing page to suit their project.
The general mailing lists (not project specific) are listed on http://www.openoffice.org/mail_list.html This is where the [email protected] is listed that you were looking for.
