Nick,

Cubase:
It depends on the plugin.  Some accept midi cc messages and these can be 
"drawn in" on the 'Controller' screen or at the bottom of the edit page.  
Otherwise you can record knob movements etc. in much the same way as you can 
record normal notes, except that you must click the "write" button on the 
VST mixer to record them.  Click the "read" button when playing back.  I 
also remember something about going to the midi setup dialog and checking 
"record sysex".....

Things you can automate:

For each channel and group:
Volume.
Pan.
Mute.
Solo.
EQ on button.
Setting for the 4 EQ modules.
8 x Send effect active switches.
8 x Send effect levels.
8 x Send effect pre switchs.
Effect dry swicth.
4 x Insert effect prog selection (audio channels 1-32 only)
4 x Insert effect parameters (the first 15 for each effect, audio channels 1 
- 32 only)

For ALL channels:
Master Volume left and right.
8 x Send effect master level.
8 x Send effect prog selection.
8 x xSend effect parameters (the first 16 for each effect)
4 x Master effect prog selection
4 x Master effect parameters (the first 8 for each effect).

As you can prolly guess I just copied that out of a book :D the book was 
written for VST 4 so I guess these MAY have changed but I doubt it.

As for Reason, god knows...:D
