I know you can add a '-v' flag to the GRUB boot options to allow
verbose booting. Maybe if you can find the equivalent options on the
install cd it will work?

Maybe you can made a r/w copy of the first .iso image and edit
/boot/grub/menu.lst to add the -v option?  Then burn that to CD...
