IIRC natural and artificial rubbers never really seems to cut well and pretty 
much all other common gasket materials (Viton, Neoprene, etc) will release 
nasty fumes. EDPM might be safer than the others, but I don’t know how well it 
would cut.

What application is the gasket for? Is plain old gasket paper unsuitable?
